How To Make Potato Stir Fry (Aloo Fry)
These are the straightforward steps to make aloo bhaji in just a few minutes. This saves you a lot of time when you make this version of my recipe.
1. Peel the potatoes and slice them thinly, like julienne cut, and soak in water for 5 minutes. Slice the onion and green chilies. Drain well and set aside.
2. Heat oil, fry onion and green chilies until golden brown.

3. Add turmeric, cumin, black pepper, and salt. Stir well.

4. Add sliced potatoes, mix to coat with spices, cover, and cook on low flame until soft.

5. Make Crispy- Increase heat and fry for a few minutes until potatoes turn slightly crispy.

6. Serve- Enjoy hot with roti, rice, or as a side dish.

Expert Tips
- Slice the potatoes evenly, so they cook at the same speed and do not burn on one side
- After soaking, drain the potatoes really well. If water stays on them, they will steam in the pan instead of frying, and you will miss that nice texture.
- Start cooking on low heat. This gives the potatoes time to become soft inside without turning brown too fast on the outside.
- Cover the pan while they cook. I do this whenever I want soft and fluffy potatoes inside.
- When the potatoes are fully tender, remove the lid and increase the heat so they become crispy on the outside.
- Always taste at the end and then add salt if needed.
