This simple yet delicious Potato stir fry (Aloo Bhujia) is the ultimate comfort food. Thinly sliced potatoes are cooked with onions, green chilies, and warm spices.

Ingredients

  • 4 large potatoes
  • 1 onion, thinly sliced
  • 3 green chilies, chopped
  • ½ tablespoon turmeric powder
  • ½ tablespoon cumin powder
  • ½ tablespoon black pepper powder
  • salt, to taste
  • 4 tablespoon vegetable oil

Instructions 

  • Peel the potatoes and slice them thinly, like julienne cut, and soak in water for 5 minutes. Slice the onion and green chilies. Drain well and set aside.
  • Heat oil, fry onion and green chilies until golden brown.
  • Add turmeric, cumin, black pepper, and salt. Stir well.
  • Add sliced potatoes, mix to coat with spices, cover, and cook on low flame until soft.
  • Make Crispy- Increase heat and fry for a few minutes until potatoes turn slightly crispy.
  • Serve- Enjoy hot with roti, rice, or as a side dish.

Notes

  • Slice the potatoes thin and evenly so they cook faster and turn crispier.
  • Adjust the chilies and spices to your taste.
