If you have never tried roasted chuda before, this is a good place to start. It is light, crunchy, and ready in under 15 minutes. Just a few simple ingredients and your air fryer does all the work.

About Chuda
Chuda, also known as Chura, poha or flattened rice, is made from paddy. The grains are soaked, flattened, and dried, which gives chuda its soft and light texture. It is a staple ingredient in many Indian households and is used in a wide variety of recipes.
Usually we make in breakfast and sometimes as an evening snack and pair it with masala chickpeas. And we call it chana chuda. This recipe is most popular, especially in the north-east India.
The sliced onion and green chili add a sharp, spicy kick that pairs really well with the mild flavour of the chuda. A light spray of oil is all you need to get everything crispy and golden. No deep frying, no extra oil, no mess.
This is the kind of snack that works any time of the day. You can eat it as an evening snack with tea, pack it for travel, or serve it when guests come over. It stays crunchy and tastes great at room temperature too.

How to Make Crispy Chuda (Chura) In Air Fryer
1. Preheat the air fryer at 180°C (360°F) for 2 minutes.
2. Add the chuda, sliced onion, and green chilies to the air fryer basket. Spray with oil, add salt, and mix well.

3. Air fry at 180°C (360°F) for 10 minutes. Toss the mixture halfway through so everything crisps up evenly.

4. Serve hot with a cup of tea. or pair with chana masala and chole.

Tips for Perfect Air Fry Chuda
- Use medium thickness chuda. Very thin chuda can burn quickly in the air fryer. Medium thickness gives a better crunch and holds up well during tossing.
- Do not skip preheating. A preheated air fryer gives even heat from the start. This helps the chuda crisp up properly instead of just drying out.
- Slice the onion thin. Thick onion slices do not cook evenly with the chuda. Thin slices soften and lightly crisp at the edges, which tastes much better.
- Toss halfway through cooking. Do not skip this step. Tossing ensures the bottom layer does not over-crisp while the top stays soft.
