- Mint leaves: Four leaves is enough for this recipe. Don’t overdo it or the mint will take over the watermelon flavor.
- Lemon: Just a quarter lemon, cut into small pieces and muddled with everything else. It brightens the whole drink and balances the sweetness from the sugar.
- Soda water: Use it chilled. Room temperature soda goes flat quickly once it hits the glass.

Here’s exactly how I make it with step by step image guide.
1. Prep the watermelon: Wash the watermelon, remove the rind, and cut it into small pieces. Set aside.
2. Soak the chia seeds: Add 1 tablespoon of chia seeds to a small bowl of water and let them soak for 10 to 15 minutes. They’ll swell and turn gel-like. Drain before using.
3. Muddle in the glass: Take your serving glass and add the watermelon pieces, lemon pieces, sugar, salt, and mint leaves. Use a muddler to press and twist everything together until the watermelon releases its juice and the mint opens up. You’ll smell it when it’s working.


4. Build the drink: Add the ice cubes first, then spoon in the soaked chia seeds, then pour in the chilled soda water. Stir gently to combine everything.

5. Serve: Drink it right away while it’s cold and fizzy.

Tips For Perfect Watermelon Mint Mojito Mocktail
- Soak the chia seeds first: Don’t add dry chia seeds directly to the drink. They’ll swell up after the fact and absorb the liquid, leaving you with a thick, gummy texture instead of a refreshing drink. Ten to fifteen minutes in water is all they need.
- Muddle, don’t blend: The muddler is the right tool here because it releases just enough juice without turning the watermelon into a warm, frothy puree.
- Use chilled soda water: Warm soda loses its carbonation the moment it hits the ice. Keep your soda water in the fridge until the second you need it, and you’ll get a much fizzier drink.
- Add ice before the soda: Putting the ice in first cools the glass and slows down the fizz loss when the soda hits. If you pour the soda into a warm glass and add ice after, you lose a lot of the bubbles right away.
