A fizzy, no-alcohol watermelon mint mojito mocktail made right in the glass with a muddler. Fresh, light, and ready in 6 minutes of active time.

Ingredients

  • ½ cup watermelon (cut into pieces)
  • 1 tablespoon chia seeds (soaked in water for 10 to 15 minutes)
  • 1 tablespoon sugar
  • ¼ lemon (cut into small pieces)
  • teaspoon salt (or to taste)
  • 5 ice cubes
  • ½ cup chilled soda water
  • 4 mint leaves

Instructions 

  • Prep the watermelon: Wash, remove the rind, and cut into small pieces.
  • Soak chia seeds: Soak 1 tablespoon of chia seeds in water for 10 minutes until gel-like. Drain before using.
  • Muddle: In a serving glass, combine watermelon, lemon pieces, sugar, salt, and mint leaves. Muddle firmly until the watermelon releases its juice.
  • Build the drink: Add ice cubes, then soaked chia seeds, then pour in chilled soda water. Stir gently to combine.
  • Serve: Serve immediately while cold and fizzy.

Notes

  • Soak chia seeds first. Dry seeds absorb the drink after it’s made and ruin the texture.
  • Muddle, don’t blend. A muddler keeps the flavor fresh and clean.
  • Add ice before soda to slow fizz loss and keep the drink colder longer.
  • Stir gently after adding soda. A hard stir pops the bubbles.
  • Best served immediately. The fizz fades and chia seeds thicken the drink if it sits too long.
