- ½ cup watermelon (cut into pieces)
- 1 tablespoon chia seeds (soaked in water for 10 to 15 minutes)
- 1 tablespoon sugar
- ¼ lemon (cut into small pieces)
- ⅛ teaspoon salt (or to taste)
- 5 ice cubes
- ½ cup chilled soda water
- 4 mint leaves
Prep the watermelon: Wash, remove the rind, and cut into small pieces.
Soak chia seeds: Soak 1 tablespoon of chia seeds in water for 10 minutes until gel-like. Drain before using.
Muddle: In a serving glass, combine watermelon, lemon pieces, sugar, salt, and mint leaves. Muddle firmly until the watermelon releases its juice.
Build the drink: Add ice cubes, then soaked chia seeds, then pour in chilled soda water. Stir gently to combine.
Serve: Serve immediately while cold and fizzy.
