1. Prepare the potatoes.
Peel and slice the potatoes thinly. Soak them in water for a few minutes to wash away extra starch, then drain well.

2. Fry onions and spices.
Heat oil in a pan and sauté onions with green chilies until golden. Stir in turmeric, cumin, black pepper, and salt to release their aroma.

3. Cook the potatoes.
Add the sliced potatoes and mix well so they get coated with spices. Cover and cook on low heat until soft.

4. Make them crispy.
Once tender, uncover and cook on high heat for a few minutes, letting the edges turn lightly golden and crisp.

Tips & Variations

  • Cut evenly: Try to keep the potato slices the same size so they cook evenly.
  • Spice level: Adjust the number of green chilies depending on how spicy you like your food.
  • Extra crispiness: Cook uncovered a little longer at the end if you want a crispier texture.

Serving & Storage Suggestions

This potato stir fry tastes best when served hot with fresh roti or steamed rice. It also makes a great side dish with dal or curry.
