About Egg Maggi Masala

Egg Maggi Masala is a loved Indian snack that takes regular instant Maggi and adds eggs, onion, tomato, and a few simple spices.

Many people make it as a fast dinner or an evening bite.

Street vendors sell their own version, often called anda Maggi, cooked on a big tawa with lots of masala.

The eggs make it more filling than plain Maggi, and the ketchup and soy sauce give it a deeper, slightly tangy taste.

Why You’ll Love This Recipe

  • Quick to make – it is ready in about 15 minutes from start to finish.
  • Filling – the eggs turn a light snack into a proper small meal.
  • Easy ingredients – most of these are already in your kitchen.
  • More taste than plain Maggi – the spices and sauces give it a real street style kick.
  • Great for any time – works as a fast dinner or an evening snack.

Ingredient Notes

egg maggie masala ingredients
  • Maggi noodles – 2 packets (140 grams). Any instant Maggi works here.
  • Eggs – 2 eggs. They get scrambled and mixed through the noodles.
  • Maggi masala – the tastemaker packets that come inside the Maggi. Keep both and use them at the end.
  • Onion – 1 small, chopped small so it cooks fast.
  • Garlic – 1 clove, chopped. It builds a nice base taste.
  • Tomato – 1, chopped. It softens down into the masala.
  • Red chilli powder – ¼ teaspoon. Add a little more if you like it hot.
  • Black pepper powder – ¼ teaspoon.
  • Tomato ketchup – 1 tablespoon. Gives a light sweet tang.
  • Soy sauce – 1 tablespoon. Adds a deep, savory taste.
  • Chilli flakes – ¼ teaspoon.
  • Oil – 2 tablespoons, split between the eggs and the masala.
  • Salt – to taste. Go light, since the Maggi masala and soy sauce are already salty.

How to Make Egg Maggi Masala

1. Take a pot and add water. When the water is warm, add the Maggi noodles and cook them until they are about 90% done. Drain the noodles and pour cold water over them so they do not stick to each other.

2. Heat 1 tablespoon oil in a pan. When the oil is hot, crack both eggs into it. Sprinkle a little salt and a pinch of red chilli powder on top. Let them set for a few seconds, then break them into small bits with your spatula to make scrambled eggs. Once they are cooked, take them out and keep them aside.

3. In the same pan, add the rest of the oil. When it is hot, add the chopped garlic and saute for a few seconds. Add the chopped onion and cook on low flame for about 1 minute, stirring often.

4. Add the chopped tomato and cook until it turns a little soft. Then add the red chilli powder, black pepper powder, salt, soy sauce, tomato ketchup, and chilli flakes. Mix everything well.

5. Add the boiled Maggi and the scrambled eggs to the pan. Sprinkle the Maggi masala on top and mix on low flame. Keep tossing until the noodles are fully coated and the color looks even. Cook for about 1 minute while stirring.

6. Turn off the flame. Serve the Egg Maggi Masala hot.

Expert Tips

  • Boil the noodles only until they are 90% done. They finish cooking in the pan, and this keeps them from going mushy.
  • Rinse the boiled noodles under cold water right away. This stops them from sticking into a lump.
  • Keep the flame low once you add the Maggi masala. It can burn fast on high heat.
  • Go easy on the salt. The Maggi masala and soy sauce already bring a lot of it.

Serving

Serve Egg Maggi Masala hot, right after you make it. It is best fresh, when the noodles still have a little bite.

You can top it with chopped coriander, a few onion rings, or a small squeeze of lemon. A pinch of chaat masala on top gives it that street style touch.

It is a full bite on its own, much like a bowl of fried rice with egg, so you do not need a side.

Storage

Egg Maggi is best eaten fresh. If you have some left over, keep it in an airtight box in the fridge for up to 1 day. The noodles will soak up the sauce and get soft.

To warm it, heat it in a pan with a small splash of water and stir on low flame. Reheated Maggi is always softer than fresh, so it helps to make only what you will finish.

Ingredients

  • 2 packets Maggi noodles (140 grams)
  • 2 eggs
  • 2 teaspoons Maggi masala (the tastemaker from the packets)
  • 1 small onion (chopped)
  • 1 garlic clove (chopped)
  • 1 tomato (chopped)
  • ¼ teaspoon red chilli powder
  • ¼ teaspoon black pepper powder
  • 1 tablespoon tomato ketchup
  • 1 tablespoon soy sauce
  • ¼ teaspoon chilli flakes
  • 2 tablespoons oil
  • Salt to taste

Instructions

  • Add water to a pot. When it is warm, add the Maggi noodles and cook until about 90% done. Drain and rinse with cold water so they do not stick.
  • Heat 1 tablespoon oil in a pan. Crack in both eggs, sprinkle a little salt and a pinch of red chilli powder, let them set, then scramble into small bits. Take out and keep aside.
  • Add the rest of the oil to the same pan. Saute the garlic for a few seconds, then add the onion and cook on low flame for about 1 minute.
  • Add the tomato and cook until soft. Add red chilli powder, black pepper powder, salt, soy sauce, ketchup, and chilli flakes. Mix well.
  • Add the boiled Maggi and scrambled eggs. Sprinkle the Maggi masala on top and mix on low flame until evenly coated. Cook for about 1 minute.
  • Turn off the flame and serve hot.

Notes

  • Boil the noodles to only 90% so they do not get mushy.
  • Keep the flame low after adding the Maggi masala.
  • Go light on salt because the masala and soy sauce are salty.
