A quick, spicy street style Maggi made with soft scrambled eggs, onion, tomato, and simple sauces. Ready in about 15 minutes.
- 2 packets Maggi noodles (140 grams)
- 2 eggs
- 2 teaspoons Maggi masala (the tastemaker from the packets)
- 1 small onion (chopped)
- 1 garlic clove (chopped)
- 1 tomato (chopped)
- ¼ teaspoon red chilli powder
- ¼ teaspoon black pepper powder
- 1 tablespoon tomato ketchup
- 1 tablespoon soy sauce
- ¼ teaspoon chilli flakes
- 2 tablespoons oil
- Salt to taste
Add water to a pot. When it is warm, add the Maggi noodles and cook until about 90% done. Drain and rinse with cold water so they do not stick.
Heat 1 tablespoon oil in a pan. Crack in both eggs, sprinkle a little salt and a pinch of red chilli powder, let them set, then scramble into small bits. Take out and keep aside.
Add the rest of the oil to the same pan. Saute the garlic for a few seconds, then add the onion and cook on low flame for about 1 minute.
Add the tomato and cook until soft. Add red chilli powder, black pepper powder, salt, soy sauce, ketchup, and chilli flakes. Mix well.
Add the boiled Maggi and scrambled eggs. Sprinkle the Maggi masala on top and mix on low flame until evenly coated. Cook for about 1 minute.
Turn off the flame and serve hot.
- Boil the noodles to only 90% so they do not get mushy.
- Keep the flame low after adding the Maggi masala.
- Go light on salt because the masala and soy sauce are salty.
