How to Make Air Fryer Potato Wedges
Four steps is all it takes. This is genuinely one of the simpler things you can make in an air fryer.
1. Wash the potatoes: Scrub them well under running water. You’re leaving the skin on, so make sure they’re clean.
2. Cut into wedges: Slice each potato lengthwise into wedge shapes. Try to keep them roughly the same size so they cook evenly.

3. Season: Put all the wedges into a large bowl. Add the salt, black pepper, paprika, mixed herbs, and ginger powder. Toss everything together until every wedge has a good coating of spice on it. You’ll see the color change as you mix.

4. Preheat the air fryer: Set it to 180°C (360°F) and let it run for 3 to 5 minutes. Don’t skip this step.
5. Arrange in the basket: Lay the wedges in a single layer. Don’t overcrowd them on top of each other.

6. Air fry: Cook at 180°C (360°F) for 18 to 22 minutes. At the 10 to 12 minute mark, shake the basket or flip the wedges over. You’ll hear them sizzle a little when you open the drawer, and they should already be starting to look golden on the bottom.

Storage and Reheating
These are honestly best eaten right away. Like most air fryer things, they lose their crunch as they sit. If you do have leftovers, store them in an airtight container in the fridge for up to 2 days.
To reheat, pop them back in the air fryer at 180°C for about 5 minutes. That brings back most of the crispiness. I wouldn’t reheat them in the microwave unless you’re okay with soft wedges.
Freezing isn’t something I’ve tested with this recipe, so I can’t say for certain how they’d come out.
