Mild green chillies filled with a spiced potato mix and cooked in the air fryer with a light spray of oil. A simple hot snack or side dish.

Ingredients

  • 6 big green chillies (about 7 ounces / 200 grams)
  • 3 boiled potatoes (about 10 ounces / 300 grams)
  • 2 tablespoons finely chopped onion
  • 2 green chillies (finely chopped)
  • 3 garlic cloves (finely chopped)
  • 2 tablespoons finely chopped coriander leaves
  • ½ teaspoon black pepper powder
  • Salt (to taste (about ½ teaspoon))
  • ½ teaspoon chilli flakes (for sprinkling)
  • Oil spray

Instructions

  • Boil the potatoes until soft. Let them cool, then peel and mash well.
  • Wash and dry the big green chillies. Cut each one in half along its length and remove the seeds.
  • In a bowl, mix the mashed potatoes, onion, chopped green chillies, garlic, coriander leaves, black pepper powder, and salt.
  • Fill each chilli with the potato mix. Sprinkle chilli flakes on top.
  • Preheat the air fryer at 360°F (180°C) for 2 minutes.
  • Place the stuffed chillies in the basket one by one. Spray oil on top and air fry at 360°F (180°C) for 12 minutes.
  • Check the chillies. They are ready when the skin is soft and the filling is hot and lightly golden on top. Air fry for 2 to 3 more minutes if needed.
  • Serve hot as a snack or side dish.

Notes

  • Boil the potatoes before you start. Boiling time is not part of the prep time.
  • Use mild green chillies. Remove all seeds to keep the heat lower.
  • Do not crowd the basket. Cook in two rounds if needed.
  • Store in the fridge for up to 2 days. Reheat at 350°F (175°C) for 3 to 4 minutes.
