Ingredients for this Recipe
Let’s discuss the ingredients, which are all easily available and may already be in your kitchen.
For Marination:
- 500g minced chicken
- 1 medium onion, chopped finely
- A handful of fresh coriander leaves, chopped
- 2-3 green chilies, crushed
- 1½ tbsp ginger-garlic paste
- Juice of 1 lemon
- 1/2 tbsp turmeric powder
- 1 tbsp red chili powder
- 1 tbsp cumin powder
- 1/2 tbsp black pepper powder
- 1 tbsp coriander powder
- 1 tbsp garam masala
- Salt to taste
- 3-4 tbsp gram flour (Besan)-this helps in binding
For Saute:
- 1 sliced onion
- 1 sliced tomato
- 2-3 slit green chilies
- A few lemon slices
- Fresh coriander leaves
- 1 tbsp chaat masala
- 1 tbsp cumin powder
- 1 tbsp red chili powder
- 1 tbsp coriander powder
- 1 tbsp oil + 1 tbsp butter (For tawa saute)
Step by Step Cooking Guide
Step 1: Mix Everything (Marinate the chicken)

Take a big bowl and add 500g minced chicken. Now add one chopped onion, 2-3 crushed green chilies, chopped coriander leaves, ginger garlic paste, and lemon juice.
Then add all the dry spices (turmeric, red chili, cumin, pepper, coriander powder, garam masala, and salt). To bind the mixture together, add 3–4 tablespoons of gram flour.
Mix everything very well and let it marinate for at least 30 minutes.
Step 2: Shape the Kababs

After marination, take the chicken mix and make small round or oval patties (like flat balls). Wet your hands slightly with water or oil so it does not stick.
Keep all the kababs ready on a plate.
Step 3: Fry the Kababs on Tawa

Heat a tawa (flat pan) over medium heat with a little oil added. Place the kababs gently on the tawa.
Cook one side for 2-3 minutes, then flip and cook the other side until golden brown and fully cooked. Once done, take them off and keep aside.
Step 4: Saute the Veggies & Spices
In the same pan, add 1 tablespoon of oil and butter. Add the tomato, onion slices, green chilies, lemon slices, and coriander leaves.
Saute for 30 seconds. Now add chaat masala, cumin powder, red chili powder, and coriander powder. Mix well.
Step 5: Toss Kababs with Veggies

Add the cooked kababs back to the pan. Gently mix everything so the kababs get coated with the flavorful veggies and spices.
Cook for 1-2 minutes, then turn off the heat. Your delicious, juicy chicken kababs are ready to serve!

- After marination, shape the mixture into small kababs or patties. Heat a little oil on a tawa (flat pan) and place the kababs on it. Cook on medium flame, flipping both sides until golden brown and cooked through.
- Once all kababs are fried, remove them and keep aside. Add a little oil and butter to the same tawa. Add sliced onions, tomatoes, green chilies, lemon slices, and coriander leaves. Sauté for about 30 seconds, then add all the listed Kabab spices.
- Now add the cooked kababs back to the tawa. Toss everything together gently for 1–2 minutes until the flavors combine well.
