Shahi Tukda Recipe Without Milk | Make at Home

An easy Indian dessert made with fried bread dipped in colored sugar syrup, topped with cream and dry fruits. No milk, no rabri. Ready in just 20 minutes.

Ingredients

  • 5 bread slices (cut into triangles)
  • 1 ½ cups 360 ml water
  • ½ cup 100 g sugar
  • 2 pinches food colour
  • Oil (for deep frying)
  • Cream (for garnishing)
  • Mixed dry fruits (finely chopped, for garnishing)

Instructions 

  • Put a saucepan on medium heat. Add 1½ cups (360 ml) water and ½ cup (100 g) sugar. Stir until the sugar fully dissolves.
  • Once the mixture comes to a boil, add 2 pinches of food colour and stir well.
  • Cook the syrup for 2 to 3 more minutes on medium heat, keeping it thin and flowing. Set aside.
  • Heat oil in a deep frying pan on medium heat. Fry the bread triangles in batches, turning once, until golden on both sides, about 2 to 3 minutes per side. Drain on a paper towel.
  • While the bread is still warm, dip each triangle into the syrup one at a time and let it soak for a few seconds.
  • Arrange the soaked pieces on a serving plate. Drizzle or pipe cream on top and finish with finely chopped mixed dry fruits.
  • Serve right away or refrigerate for 20 to 30 minutes before serving.

Notes

  • Keep the syrup thin so the bread can soak it up easily. If it thickens, add a splash of warm water.
  • Fry on medium heat for an even golden color throughout.
  • Dip the bread in syrup while it is still warm for better absorption.
  • Chop dry fruits finely for even coverage on top.
  • Best served the day it is made. Refrigerate leftovers for up to 1 day.
