A fresh blended pineapple mocktail made with real fruit, lemon juice, and a pinch of salt. Ready in few minutes and better than anything from a packet.
- ½ cup pineapple (cut into pieces)
- 5 ice cubes
- 1 tablespoon sugar
- 1 tablespoon lemon juice
- ⅛ teaspoon salt
- ½ cup soda water or chilled water
Prep the pineapple: Wash the pineapple. Remove the outer skin and hard core, then cut into medium-size pieces.
Load the blender: Add pineapple pieces, sugar, lemon juice, and salt to a blender jar. Add 1 to 2 ice cubes if the pineapple isn’t cold.
Blend smooth: Blend everything together until completely smooth and slightly frothy.
Build the glass: Add ice cubes to your serving glass, then pour in the blended pineapple mixture.
Add water: Pour in chilled water or soda water and stir well.
Garnish and serve: Garnish with a pineapple piece and lemon slice. Serve immediately.
- Use ripe pineapple for natural sweetness. An underripe one will make the drink sharp and sour.
- The 1/8 teaspoon of salt is not optional. It lifts the sweetness and makes the pineapple flavor much brighter.
- Blend for a full 30 to 60 seconds to get a fully smooth mixture with no fibrous bits.
- Soda water gives a light fizz. Chilled still water gives a smoother, thicker texture. Both work.
- Serve immediately. The blended mixture can be made ahead and refrigerated, but only add the water and ice right before serving.
