In a mixing bowl, crack in the egg and add sugar, salt, milk, and vanilla extract. Whisk well until the sugar fully dissolves and the mixture looks smooth.
Add the all-purpose flour and baking powder, then whisk again until you get a lump-free batter with a pourable consistency.
Add ¼ tablespoon oil and mix gently. Let the batter rest for about 5 minutes so the pancakes turn soft and fluffy. If you do not have enough time, skip resting time.
Heat a non-stick skillet over medium heat and lightly grease it with a little oil. I skip gresing step because my pan surface is non-sticky.
Pour about ⅓ cup of batter into the pan and spread gently into a round shape. Cover and cook for 2 to 3 minutes, until bubbles form on the surface and the edges look set.
Flip the pancake and cook the other side until golden brown and cooked through.
Remove from the pan and repeat with the remaining batter. Now! Your simple fluffy pancakes are ready to serve.
