These fluffy pancakes are soft, light, and incredibly easy to make with just a handful of everyday ingredients. Perfect for breakfast or brunch, they cook up golden and delicious in minutes.

Ingredients

  • 1 egg
  • ¼ tablespoon salt
  • ¼ cup sugar
  • 1 tablespoon vanilla essence
  • ½ cup milk
  • 1 cup all-purpose flour (maida)
  • 1 tablespoon baking powder
  • ¼ tablespoon oil

Instructions 

  • In a mixing bowl, crack in the egg and add sugar, salt, milk, and vanilla extract. Whisk well until the sugar fully dissolves and the mixture looks smooth.
  • Add the all-purpose flour and baking powder, then whisk again until you get a lump-free batter with a pourable consistency.
  • Add ¼ tablespoon oil and mix gently. Let the batter rest for about 5 minutes so the pancakes turn soft and fluffy. If you do not have enough time, skip resting time.
  • Heat a non-stick skillet over medium heat and lightly grease it with a little oil. I skip gresing step because my pan surface is non-sticky.
  • Pour about ⅓ cup of batter into the pan and spread gently into a round shape. Cover and cook for 2 to 3 minutes, until bubbles form on the surface and the edges look set.
  • Flip the pancake and cook the other side until golden brown and cooked through.
  • Remove from the pan and repeat with the remaining batter. Now! Your simple fluffy pancakes are ready to serve.

Notes

  • Let the batter rest for a few minutes to get softer pancakes.
  • Cook on medium heat so the inside cooks fully without burning.
  • Flip only when bubbles appear on top for best texture.
  • Store leftovers in the fridge and reheat gently for soft results.
