Baby potatoes, bell pepper, tomato, and onion air fried on skewers until tender and juicy, ready in under 30 minutes with barely any cleanup.

Ingredients

  • 250 gm baby potatoes (halved)
  • 1 bell pepper (cut into cubes)
  • 3 tomatoes (cut into cubes)
  • 1 onion (cut into cubes)
  • ½ teaspoon paprika
  • ¼ teaspoon black pepper
  • ¼ teaspoon cumin powder
  • 1 tablespoon oil
  • teaspoon ginger powder
  • teaspoon garlic powder
  • teaspoon onion powder
  • ¼ teaspoon mixed herbs
  • Salt (to taste)

Instructions 

  • Wash and cut: Wash the baby potatoes, onion, tomato, and bell pepper, then pat dry. Cut the onion, tomato, and bell pepper into cubes and halve the baby potatoes.
  • Season everything: In a mixing bowl, combine the vegetables with paprika, black pepper, cumin powder, ginger powder, garlic powder, onion powder, mixed herbs, salt, and oil. Toss to coat.
  • Thread the skewers: Thread the potatoes, onion, bell pepper, and tomato onto skewers in your preferred order.
  • Preheat: Preheat the air fryer to 180°C (360°F) for 2 minutes.
  • Load the basket: Arrange the skewers in the basket without overcrowding. Cook in batches if needed.
  • Air fry: Cook at 160°C (320°F) for 15 minutes, flipping once halfway and spraying with a little oil.
  • Serve: Serve hot with your favorite dip.

Notes

  • Baby potatoes give the most even cook, don't swap them for large chopped potatoes.
  • Leave space between skewers in the basket so the vegetables actually crisp instead of steam.
  • Flip halfway through and spray a little extra oil for the juiciest result.
